Peppermint Bark

  1. Turn cookie sheet upside down, cover with foil. Mark a 12x9 rectangle on foil.
  2. Gently melt white chocolate in microwave (slow, stirring frequently). Pour 2/3 cup melted white chocolate onto foil, spread evenly.
  3. Sprinkle w 1/4 cup candy canes. Chill for 15 mins, until set.
  4. Microwave semisweet chocolate, cream, and peppermint extract until just melted. Stir until smooth.
  5. Cool until barely lukewarm. Pour in long lines over white chocolate rectangle. Spread in an even layer. Chill until firm + cold, 25 mins.
  6. Gently rewarm remaining white chocolate and pour over semisweet layer. Spread.
  7. Sprinkle rest of candy canes and gently press into chocolate.
  8. Chill until firm, 20 mins.
  9. Lift foil and bark off of cookie sheet, peel off foil. Cut or break bark into pieces.
