Crawfish Fettucine
- 2 onions, finely chopped
- 3 celery stalks, chopped
- 1 bell pepper, chopped
- 2 sticks margarine
- 1/8 c. flour
- 2 Tbsp. dehydrated parsley
- 1 button minced garlic
- 1/2 pt. half and half
- 2 lb. crawfish tails
- 1/2 lb. Velveeta, cubed
- 1 Tbsp. jalapeno relish
- 12 oz. fettucine noodles
- Parmesan cheese
- salt, red and black pepper to taste
- Add onions, celery and bell pepper to 2 sticks margarine. Saute until cooked.
- Add flour and cook with cover on low for 15 minutes, stirring frequently.
- Add parsley and crawfish and cook 15 minutes.
- Stir.
- Add half and half, half of Velveeta, jalapeno relish, garlic, salt and pepper.
- Cook on low heat about 30 minutes, stirring occasionally.
