Focaccia(Genoan Flat Bread)

  1. Early in day:

  4. bowl,
  5. combine
  6. yeast,
  7. 1 cup flour and 1 teaspoon
  8. salt.
  9. In

  11. quart saucepan over medium heat, heat milk, 2
  12. tablespoons
  13. olive
  14. oil
  15. and 1/4 cup water until very warm (120u0b0
  16. to
  17. 130u0b0).
  18. With
  19. mixer
  20. at
  21. low speed, gradually beat milk
  22. mixturetnto
  23. dry ingredients just until blended. Increase speed
  24. to medium; beat 2 minutes, occasionally scraping bowl with rubber spatula.
  25. Beat in 1/2 cup flour to make a thick batter;
  26. continue beating 2 minutes, scraping bowl often.
  27. With wooden spoon,
  28. stir in 1 cup flour to make a soft dough.
  29. Sprinkle work
  30. surface
  31. with
  32. remaining
  33. 1/2 cup flour, turn dough onto work surface and knead until smooth and elastic, about 8 minutes. Shape
  34. into
  35. a
  36. ball
  37. and
  38. place in greased large bowl, turning dough
  39. to grease top.
  40. Cover; let rise in warm place until double, about 1 to 1 1/2 hours.
