Simple Chocolate Bread Pudding
- 5 cups bread broken into small pieces
- ----- Chocolate Custard -----
- 2 cups vanilla soy milk (or regular whole)
- 4 egg yolks
- 1/2 cup granulated sugar
- 7 Tablespoons cocoa powder
- 2 Tablespoons butter (or omit for non-dairy)
- ----- Meringue -----
- 4 egg whites
- 1 Tablespoon corn starch
- 1/4 cup sugar
- Preheat oven to 350 degrees F.
- Slowly bring custard ingredients to a boil while whisking to ensure egg yolks combine smoothly.
- Remove from heat, add bread, mix thoroughly, and set aside to soak while cooling (10 min - longer for bread that is more dense).
- Whip egg whites into meringue, slowly adding sugar and corn starch until stiff peaks form while bread and custard mixture cools and begins to thicken.
- Mix in the meringue after the bread has thoroughly soaked up most of the custard as this will result in more fluffy pudding.
- Place into a baking dish and bake for 30 min at 350 degrees F. Serve warm with ice cream or whipped topping of choice.
