Guiltless Turkey Chili
- 1.5 pounds ground 99% fat free turkey;
- 2 tablespoons olive oil;
- 2 medium chopped onions;
- 2 minced garlic cloves;
- 1/3 cup chili powder;
- 2 teaspoons cayenne pepper (or less if you don't like it spicy);
- 1 teaspoon black pepper;
- 2 bay leaves;
- 3 to 4 cups beef broth;
- 2 beef bouillon cube (optional);
- 1 15-ounce can cannellini beans;
- 1 15-ounce can kidney beans;
- 1 15-ounce can black beans;
- 1 15-ounce can of diced tomatoes;
- Shredded low fat cheddar cheese(optional);
- Low fat sour cream (optional)
- 1. Saute onions in olive oil until glossy. Add and briefly saute minced garlic.
- 2. Add turkey and cook turkey over medium heat until cooked through.
- 3. Stir in chili powder, cayenne pepper and black pepper and let cook for a minute or two to release the aromas of the seasonings.
- 4. Add unrinsed cannellini, kidney and black beans and diced tomatoes. Add bay leaves and enough beef broth to cover mixture. Add bouillon cubes if desired.
- 5. Bring to a boil, then lower heat and let simmer for 1/2 hour. Remove bay leaves.
- Serving tips: Sprinkle with low fat shredded cheddar and add a dollop of low fat sour cream if desired. Can also be served over rice.
