Easter Babka

  1. Thoroughly
  2. mix
  3. 3/4
  4. cup
  5. flour, sugar and undissolved yeast in
  6. large
  7. bowl.
  8. Combine milk and oleo in a pan.
  9. Heat over
  10. low heat
  11. until
  12. liquid
  13. is warm (oleo does not need to melt), gradually add to dry ingredients and beat 2 minutes at medium speed
  14. of
  15. electric mixer, scraping bowl occasionally. Add eggs and
  16. 1/2
  17. cup
  18. flour or enough flour to make a thick batter.
  19. Beat at
  20. high
  21. speed 2 minutes, scrape occasionally. Add
  22. remaining flour and beat 2 minutes at high speed.
  23. Cover, let
  24. rise
  25. in warm
  26. place
  27. free from draft about 1 hour until bubbly.
  28. Stir
  29. in fruit
  30. and
  31. raisins.
  32. Turn into greased and floured
  33. 2-quart
  34. tube pan.
  35. Let rise, uncovered, for 30 minutes.
  36. Bake at 350u0b0 for 40 minutes.
  37. Before removing from pan, prick
  38. surface
  39. with
  40. fork, pour
  41. rum syrup over cake.
  42. After absorbed,
  43. remove
  44. from pan and cool on wire rack.
  45. When cool, frost with confectioners sugar frosting.
