Nate Berkus Latin Turkey Breast
- Oven Roasted Turkey Breast with Latin Rub, Mixed Herbs and Pistachio Crust
- Ingredients
- 1 (6 to 8) pound turkey breast, remove bones
- 1 cup Latin Spice*
- 1/4 cup chopped cilantro
- 1/4 cup chopped flat parsley
- 3 tbs chopped lemon thyme
- 1 tb sea salt
- 1 tb fresh pepper
- 1/2 cup pistachios
- 1/2 cup butter
- Latin Spice
- 4 Tablespoons Garlic powder
- 4 Tablespoons Onion powder
- 2 Tablespoon Paprika
- 4 Tablespoon Chili Powder
- 2 Tablespoon Cumin
- Directions
- Preheat the oven at 350 degrees F.
- Place the butter, herbs and pistachios in a food processor until smooth.
- Place the herb/butter mixture in between the skin and the flesh, making sure to cover the entire breast.
- Season the breast with the Latin Spice, salt and pepper.
- Cover loosely with aluminum foil for 1 1/2 hours then uncover until cooked through and golden brown.
- Place the breast in a rack inside a roasting pan and bake for 2 to 3 hours or until the internal temperature reaches 180 degrees (this will depend on the size of the breast and the oven used).
- Once the breast is cooked, remove from the oven and let rest for 5 to 10 min. Slice and serve.
