Grilled Tomato Pasta
- 1 head of garlic
- 12plum tomatos
- 1/2 cup olive oil
- 2 tablespoons butter
- 1/4 cup freshly grated parmesan cheese
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh basil
- 7 oz hot pancetta
- salt and pepper to taste

- 1.Preheat bbq to low, peel garlic and drizzle with olive oil. wrap in foil and place on warming rack. Cook until garlic is soft, about 15-20 minutes.
- 2.In a large bowl, toss the tomatoes (halved and seeded) with 1/4 cup olive oil and salt and pepper to tast.
- 3.Increase bbq to medium-high and grill the tomatoes skin side down until lightly charred (3 minutes). Turn once and grill another 2 minutes. Remove from grill and disregard the skins (which should peel off very easily)and coarsley chop the tomatoe pulp.
- 4.Dice the Pancetta into small peices and fry on side burner while cooking the tomatoes.
- 5.Bring a large pot of salted water to boil on bbq side burner and cook pasta till al dente.
- 6.Using a fork mush the softened garlic in a bowl and add the chopped tomatoes, cooked pancetta, stir in parsley, basil, butter and remaining olive oiland season with salt and pepper.
- 7.Toss with hot pasta and sprinkle with parmesan cheese.
