Grilled Tomato Pasta

  1. 1.Preheat bbq to low, peel garlic and drizzle with olive oil. wrap in foil and place on warming rack. Cook until garlic is soft, about 15-20 minutes.
  2. 2.In a large bowl, toss the tomatoes (halved and seeded) with 1/4 cup olive oil and salt and pepper to tast.
  3. 3.Increase bbq to medium-high and grill the tomatoes skin side down until lightly charred (3 minutes). Turn once and grill another 2 minutes. Remove from grill and disregard the skins (which should peel off very easily)and coarsley chop the tomatoe pulp.
  4. 4.Dice the Pancetta into small peices and fry on side burner while cooking the tomatoes.
  5. 5.Bring a large pot of salted water to boil on bbq side burner and cook pasta till al dente.
  6. 6.Using a fork mush the softened garlic in a bowl and add the chopped tomatoes, cooked pancetta, stir in parsley, basil, butter and remaining olive oiland season with salt and pepper.
  7. 7.Toss with hot pasta and sprinkle with parmesan cheese.
