Thai Mango Salad
- 6 marinated tofu steaks ( 1 9 oz firm tofu
- 2 tbsp coriander
- 4 tsp garlic powder
- 1/2 cup tamari
- 2 cups filtered water
- For tofu steaks
- cut tofu into 4 1/4 inch slices, then cut into triangles. Combine everything and mix well, marinate for at least one hour
- 8 cups of lettuce greens
- 1/2 batch spiced peanut dressing
- 4 tbsp natural smooth peanut butter
- 4 tbsp filtered water
- 4 tbsp lime juice
- 8 tbsp cocunut milk
- 2 tbsp tamari
- 2 tbsp raw sugar
- Combine all and blend well
- 1 fresh mango
- 6 tablespoons chopped peanuts
- 6 tablespoons chopped cilantro
- 2 cups pea green sprouts
- Grill tofu
- Toss lettuce with peanut dressing
- Top with Mango, chopped peanuts, cilantro, pea green sprouts and grilled tofu
