Sea Mist Scramble
- Puffy Oven Pancake
- 2 whole eggs
- 1/2 cup flour
- 1/2 cup milk
- 2 tablespoons butter
- Sea Mist Scramble
- 3 tablespoons butter
- 8 whole eggs
- 1/4 teaspoon dill weed
- 6 ounces crabmeat
- 3 ounces cream cheese
- MAKE THE PUFFY OVEN PANCAKE:
- 1. Heat oven to 425 degrees F. In a medium bowl, beat 2 eggs slightly. Add flour and milk to eggs, beating with rotary beater until combined.
- 2. Melt 1 tablespoon of butter in each of two 9" glass pie plates in oven; spread to cover bottom. Pour 1/2 the batter into the prepared pie plates.
- 3. Bake for 10 to 15 minutes or until golden brown.
- MAKE THE SEA MIST SCRAMBLE:
- 1. While the Puffy Oven Pancake is baking, melt butter in a large skillet. Whisk eggs and dill weed. If using frozen crabmeat, thaw and drain.
- 2. In a medium bowl, use 2 forks to flake the crabmeat. Pour egg mixture over crabmeat, gently mix together. Pour mixture into skillet.
- 3. Cook and stir gently until eggs are set. Fold in cubes of cream cheese. Pour Sea Mist Scramble into Puffy Oven Pancake and serve immediately.
