Orange Roughy Pasta Florentine
- vegetable cooking spray
- 1 clove garlic
- 1 tsp. cornstarch
- 3/4 tsp. dried basil
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 3/4 c. skim milk
- 2 c. lightly packed, finely chopped spinach
- 1 lb. orange roughy, cut in bite size pieces
- 1/3 c. Parmesan cheese
- 4 c. cooked linguine
- Coat a 2-quart casserole with cooking spray.
- Add garlic. Microwave on High 30 seconds; add cornstarch and next 3 ingredients.
- Gradually add milk, stirring with a wire whisk until blended.
- Microwave on High 3 to 4 1/2 minutes or until slightly blended, stirring every 1 1/2 minutes.
- Stir in spinach and fish. Cover with lid; microwave on High 4 minutes or until fish flakes. Let stand one minute.
- Stir in cheese and serve over pasta.
