Mock Stroganoff
- 1/2 lb. ground beef
- 1 (10 1/2 oz.) can condensed French onion soup
- 1/2 c. water
- 1 (10 oz.) pkg. frozen mixed vegetables
- 1 (16 oz.) can button mushrooms in butter (undrained)
- 4 oz. uncooked elbow macaroni (2 c.)
- 1/4 tsp. basil
- 1/8 tsp. pepper
- 1/2 c. plain low-fat yogurt
- In large skillet, brown meat over medium heat.
- Add soup, water, mixed vegetables, mushrooms, macaroni
- and seasonings. Bring to boil.
- Reduce heat; cover and simmer 10 to 15 minutes, stirring occasionally, until macaroni is tender.
- Remove from heat; stir in yogurt.
- Cook over low heat, stirring, until heated through.
- Per serving:
