Lemon Parmesan Pasta With Vegetables
- 2 slices bread
- 1 tbsp olive oil
- 1/2 box whole wheat pasta
- 1 tbsp olive oil
- Anchovy paste
- 5 cloves chopped garlic
- 1 small chopped onion
- 1 chopped shallot
- Juice and zest of one lemon
- Red pepper flakes
- Basil
- Parsley
- 12 sliced mushrooms
- 1 sliced zucchini
- 1 bag spinach
- 1 handful arugula
- 1 cup white wine
- 1/2 cup pasta water
- 1 tbsp butter
- 1 shot of cream
- Pine nuts
- Grated parmesan cheese
- Preheat oven to 375 degrees. Pulse bread in food processor. Spread bread on baking sheet. Drizzle with oil. Bake for 5 mins.
- Cook pasta.
- Heat 1 tbsp oil with anchovy paste 1 min. Add garlic, onion, shallot, lemon juice and zest, red pepper flakes, basil, and parsley. Cook 5 min.
- Add mushrooms and zucchini. Cook 5 min.
- Add pasta, spinach, arugula, wine and pasta water. Cook 5 min.
- Top with parmesan, bread crumbs, and pine nuts.
