Banana Oatmeal Muffins
- 1/2 c. uncooked oats, quick and regular
- 1/2 c. milk
- 1 c. unsifted flour
- 1/2 c. sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1/4 c. butter, melted
- 1 egg
- 1 c. mashed ripe bananas
- 1/2 c. unsalted sunflower seeds or raisins (optional)
- In a medium bowl, combine oats and milk.
- Set aside until milk is absorbed.
- In a medium bowl, mix flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
- Add butter, egg and bananas to oat mixture.
- Add to dry ingredients and stir until moistened.
- Stir in seeds or raisins.
- Fill greased 2 1/2-inch muffin pans or paper cups 2/3 full.
- Bake in a preheated 425u0b0 oven for 15 minutes or until tester comes out clean.
- Makes 12.
