Arugula, Carmelized Onion, Penne Salad
- 1 lb. bag washed baby arugula (or mix with spinach)
- 1 large onion, sliced thin
- 1 teaspoon salt
- fresh ground pepper
- 1 tablespoon sugar
- 3 tablespoons extra virgin olive oil
- 12 oz. penne pasta
- 12 oz cherry tomatoes, halved
- 2 tablespoons balsamic vinegar
- 6 oz. gorgonzola or goat cheese, crumbled
- 4 oz. toasted pinenuts or walnuts (optional)
- In a large serving bowl, add greens.
- Boil water for pasta.
- While pasta water is heating, heat over medium heat, olive oil in large skillet. Add onions, salt, sugar and pepper. Stirring to cover and carmelize onions - takes about 10-15 minutes.
- In a microwaveable bow, add tomatoes and balsamic vinegar, microwave for 1 minute on high.
- Cook pasta to al dente. Save one cup water, drain pasta.
- Add hot ingredients - pasta, tomatoes, onions, water to greens. Add cheese and nuts, toss and eat.
