Christine Landry Caesar Salad
- 1 or 2 garlic cloves
- 1/8 tspn salt
- 1 tin flat anchovies drained - which is about 8 small anchovies
- 6 capers
- 2 dash worstershire sauce (Ive been doing 3 dashes!)
- 2 dash tabasco (I've been doing 3)
- 1 pinch dry mustard
- 1 egg yolk
- 5 tablespoon olive oil
- 2 1/2 tablespoon red wine vinegar
- 1 tablespoon lemon juice
- fresh parmesan
- croutons
- You are supposed to make caesar only in a wooden bowl by crushing the garlic, adding salt and rub against side of bowl. Add chopped anchovies, capers, egg yolk (this should be "coddled" but I have never done that), worstershire, tabasco, mustard and whisk. Then you slowly add oil. vinegar and lemon juice, whisking all the time.
- I have always just thrown together into a kitchen whizz and wizzed it all up together.
