Half Moon Burritos

  1. Brown your meat in a skillet with your favorite mexican seasonings. Place one tablespoon of butter on a non-stick skillet and melt it around. Place a flour tortilla on the butter and top with about 2/3 c. of refried beans. Sprinkle on shredded monterey jack cheese in desired amount and meat filling and rice. Fold your tortilla over one time to make a half moon shape and top the outside top with 2 T. cheddar cheese. Flip over and cook cheese until it forms a crust and then plate and top with your favorite toppings.
