Mexican Breakfast Casserole
- t package of spicy or mild sausage (my family likes Jimmy Dean)
- t medium onion, chopped
- t 16 oz frozen diced potatoes, (let them thaw a little so it's easier to break up and spread around the pan)
- t 1/2 cups shredded Monterey Jack or Cheddar cheese ( I used a mix of pre-shredded Taco cheese and add jalapeno cheese)
- t eggs, beaten
- t/2 cup milk
- t/4 teas chili pepper ( sometime I will use a taco seasoning instead)
- tild salsa, and sour cream optional
- In a large skillet, cook sausage, onion, pepper breaking up sausage with a spatula. When sausage is cooked through, drain off excess fat.
- In a baking dish, layer the potatoes, half of the shredded cheese, browned sausage and onion mixture,.
- In a bowl, combine eggs, milk and; pour egg mixture over sausage and potatoes. Sprinkle the remaining cheese on top.
- Bake, covered, in a 350u0b0 oven for 45 to 55 minutes or until a knife inserted near center comes out clean. Remove from oven and let stand for 10 to 15 minutes.
- Serve with Salsa and Sour cream, optional
