Black Bean Pasta
- 12 oz. uncooked bowtie pasta
- 6 to 8 garlic cloves, diced
- 1/4 c. olive oil
- 2/3 c. fresh Key lime juice
- 1/2 c. sherry
- 2 c. sliced green onions
- 1 lb. plum tomatoes, chopped
- 2 (15 oz.) cans black beans, rinsed and drained
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 Tbsp. grated Key lime rind
- 1/2 c. chopped fresh parsley
- Cook pasta according to package directions, drain and keep warm.
- Saute garlic in oil in skillet until tender.
- Add lime juice and sherry, cook over high heat 5 minutes or until mixture is reduced to 1/4 cup.
- Add green onions and chopped tomato. Cook over medium heat, stirring occasionally, for 5 minutes.
- Stir in black beans and next 3 ingredients.
- Pour over pasta, toss to coat.
- Sprinkle with parsley, serve immediately.
