Hatch'S Granola
- 1/2 c flax seeds
- 1 1/4 c rye flakes
- 1 1/4 c wheat flakes
- 7 c thick rolled oats
- 1 1/2 c soy nuts
- 2 1/2 c shredded coconut
- 1 1/4 sunflower seeds
- 1 c sesame seeds
- 1 1/4 c whole almonds (see note)
- 1 c canola oil (I use 1 1/4)
- 1 c honey (I use 1 1/4)
- 2 c diced, dried apple pieces
- 1 1/4 raisins
- 1 1/4 c dried apricots
- 1 1/4 currents or cranberries
- 1. Heat oven to 350. In a large kettle combine the first 9 ingredients and stir.
- 2. Pour oil then honey into pyrex. Pour over dry ingredients and combine. Spread 1 in. deep into 2 greased 11x17 pans
- 3. Bake for about 30 minutes, stirring two or three times to prevent browning.
- 4. Return to large kettle and stir in dried fruit.
- note: if starting with raw almonds, roast in 350 oven on cookie sheet for about 8 minutes before adding to ingredients.
