Blackberry Chocolate Flan
- Pie Dough: 1 c all purpose flour, 1/4 cu unsweetened cocoa, 1/2 c confectioners sugar, pinch of salt, 3 oz unsalted butter cut into small pieces, 1/2 egg yolk
- Filling: 1 1/4 c heavy cream
- 6 oz blackberry preserves
- 8 oz semi sweet choc, small pieces
- 2 tbs unsalted butter cut into small pieces
- Sauce: 8 oz blackberries, plus extra for decorating
- 1 tbsp lemon juice
- 2 tbsp superfine sugar
- 2 tbsp creme de cassis
- Dough: sift flour, cocoa, conf. sugar, and salt in to mixing bowl. Make a well in the center. Place butter and yolk into well and gradually mix using a pastry blender or 2 forks. Knead into a ball Wrap and chill for 1 hour. Preheat oven to 350. Roll out dough and line a 12x4 in tart pan. Prick wiht fork and line with parchment and dried beans (to weight). Bake for 13 minutes. Cool.
- Filling: Place cream and preserve in pan and brin gto a boil over low heat. Remove from heat and stir in chocolate and then butter until smooth. Pour into crust and set aside to cool.
- Sauce: Blackberries, lemon juice and sugar in to blender. Add Creme de Cassis. Set aside.
- Serve: Top with blackberries and brush with sauce. Serve with remaining sauce on the side.
