Seafood Gumbo

  1. saute onions and garlic in olive oil until tender, blend in flour with whisk until golden brown. Stir in 2 cups chicken broth,tomatoes,oregano,thyme,bayleaves,salt,and peppers, bring to boil, then simmer for 1 hour. Remove bay leaves add okra, simmer for 30 minutes or until fork tender. Gently stir in crab, shrimp, and cubed fish. Simmer for another 5 minutes. Can be served over rice, but can stand alone as a stew.
