Jerk Chili
- 3 lbs Ground Beef
- 1 lb Ground Pork
- 1 lb Chopped Bacon
- 8 Cloves Garlic Minced
- 2 Large Onions Chopped
- 1 Red Pepper Chopped
- 1 Green Pepper Chopped
- 3 Large Cans Tomatoes
- 2 Cans Kidney Beans - rinsed & drained
- 2 Cans Black Beans - rinsed & drained
- 1 Large Can Pumpkin
- 1 Can Beef Broth
- 1 Cup Dark Rum
- 1 tsp Tabasco
- 1 Tbsp Onion Powder
- 1 tsp Cayenne
- 1 Serrano Chili
- 1 Habanero Chili
- 1 Tbsp Garlic Powder
- 2Tbsp Cumin
- 1 tsp White Pepper
- 1/3 Cup Chili Powder
- 2Tbsp Allspice
- 1 Tbsp Brown Sugar
- 1 tsp Cinnamon
- 1 tsp Ginger
- 1 tsp Nutmeg
- 2 Tbsp Thyme
- 1 Chicken Bouillon Cube
- 2 Beef Bouillon Cubes
- Render bacon. Cook Garlic and Onion until soft. Brown Meat. Add all the ingredients except beans. Simmer for 1 1/2 hour. Add beans. Add liquid as necessary. Adjust Seasoning.
