Fumi Salad
- Salad:
- 1/2 c. slivered almonds
- 1/2 c. sesame seeds
- 1 med. head cabbage, shredded, or slaw mix
- 6 green onions, sliced, including some green tops
- 2 pkg Ramen noodle soup, any flavor
- Dressing:
- 1/4 c. sugar
- 1 tsp black pepper
- 1 c. salad oil
- 2 tsp. salt
- 6 Tbsp (1/3 c.) unseasoned rice vinegar
- Brown almonds in dry skillet, stirring and watching carefully. Reserve. Repeat with sesame seeds. Reserve.
- Prepare the dressing: Assemble dressing ingredients in blender container, cover securely, blend until smooth, about 10 seconds.
- Place cabbage, green onions, and toasted almonds and seeds into a very large bowl. With the heel of your hand, carefully crush the noodles right in the packages, trying not to break open packages until noodles are crushed. Then, open the noodle packages and add the crushed noodles to the salad, removing and discarding the flavor packets. Briefly re-mix the dressing in the blender and pour all of the dressing over the salad. Mix all together, serve immediately.
