Spaghetti Primavera With Cheese Sauce
- 3/4 (16 oz.) pkg. spaghetti
- 3 Tbsp. olive or salad oil
- 1 clove garlic, minced
- 1 medium bunch broccoli, cut into 2 x 1-inch pieces
- 1 small red pepper, cut in thin strips
- 1/2 (8 oz.) pkg. process cheese spread, cubed
- 1 c. milk
- 1/4 c. grated Parmesan cheese
- 1/2 tsp. dried oregano
- Prepare spaghetti as directed.
- In skillet over medium-high heat, cook garlic in oil until lightly browned.
- Discard garlic. Add broccoli and red pepper; cook, stirring constantly, until coated with oil.
- Add 1/4 cup water.
- Reduce heat to medium; cover and cook until broccoli is tender-crisp, stirring occasionally. Reduce heat to low.
- Add cheese spread, milk, Parmesan cheese and oregano; cook until cheese melts and mixture is blended.
