Pumpkin Bread (Once Upon A Chef)

  1. preheat oven to 325
  2. grease two 8.5 x 4.5 inch loaf pans and dust with flour
  3. combine flour, salt, baking powder, baking soda, and spices in a bowl and use a whisk to mix well
  4. in mix master, at medium speed, beat butter and sugar until just blended. add eggs one at a time, beating well after each. continue beating until very light and fluffy, a few minutes. beat in pumpkin. the mixture might look grainy and curdles at this point -- that is ok.
  5. at low speed, beat in flour mixture until well combined.
  6. turn batter into prepared pans, dividing evenly.
  7. bake for 60-70 mins until tester is clean
  8. let cool in pan for 10 min
  9. put on wire rack to cool completely
  10. if loaves stick use plastic knife to loosen
