Taco Quinoa

  1. Put quinoa in a fine mesh strainer and rinse under cold water. Put rinsed quinoa into a saucepan and add 1 1/2 cups water. Put over high heat and bring to a boil. Once boiling, reduce to a simmer, cover, and cook 15 minutes. Once finished cooking, keep covered and set to the side.
  2. While quinoa is cooking, heat olive oil in a pan and add the peppers and onions. Saute for about 5 minutes. Once sauted, take first packet of taco seasoning and add the remaining 1/4 cup of water to it. Mix and add to the veggies. Cook for 2 more minutes.
  3. Drizzle olive oil in the cooked quinoa and add salt and other half of the taco seasoning. Fluff with a fork and add to veggies. Stir to combine.
  4. Heat black beans in a microwave-safe bowl for about 1 1/2 minutes. Add heated beans and cheese to quinoa mixture and mix until melted. Serve hot.
