Aromatic Egg Pilaf

  1. Heat the oil in a large pan. Add sliced onion and fry on medium-low heat till onions are browned and crispy (several minutes) . Now add ginger, garlic, whole spices, turmeric, chili powder, garam masala, salt and fry for about a minute till spices are aromatic. Add cashewnuts, raisins, cooked rice and stir-fry for a 5-6 minutes till rice is heated through and coated with spice mixture. Add sliced eggs and toss together. Serve hot.
