Aromatic Egg Pilaf
- 4 hard-boiled eggs
- 4 cups long-grain rice, cooked and cooled
- 1 onion, thinly sliced
- 1 tsp minced ginger
- 1 tsp minced garlic
- 1 cinnamon stick ( or 1/4 tsp ground cinnamon)
- 5 whole cloves ( or 1/4 tsp ground cloves)
- 5 whole peppercorns ( or 1/4 tsp ground pepper)
- 5 cardamom pods ( or 1/4 tsp ground cardamom)
- 1/2 tsp turmeric
- 1/2 tsp chili powder or cayenne pepper
- 1/2 tsp garam masala
- 2 tbsp cashewnut pieces
- 2 tbsp raisins
- 2 tbsp vegetable oil (or ghee or butter)
- salt to taste
- Heat the oil in a large pan. Add sliced onion and fry on medium-low heat till onions are browned and crispy (several minutes) . Now add ginger, garlic, whole spices, turmeric, chili powder, garam masala, salt and fry for about a minute till spices are aromatic. Add cashewnuts, raisins, cooked rice and stir-fry for a 5-6 minutes till rice is heated through and coated with spice mixture. Add sliced eggs and toss together. Serve hot.
