Tamarind Club Shrimp Fritters

  1. Be sure to make batter just before using. Have egg and club soda cold.
  2. Prehead frying oil at 350.
  3. Quickly combine egg and water (start with a smaller amount of club soda).
  4. Add vegies, shrimp, flour, corn starch, salt and pepper. combine until just barly mixed. Should still be lumpy.
  5. Add more club soda if very dry, should almost pour, but still hold together in the hot oil.
  6. Deep fry until golden and cooked through.
