Tamarind Club Shrimp Fritters
- 1 cup chopped vegetbles (small dice)
- (can use oions, red peppers, green peppers and corn. Ad minced jalepeno peppers if you like hot)
- 1/2 cup (or more) chopped shrimp
- 1/2 flour
- 1/2 corn starch
- 1 teaspoon baking powder
- 1 egg
- 1/2-1/3 cup chilled club soda
- salt and pepper to taste
- Be sure to make batter just before using. Have egg and club soda cold.
- Prehead frying oil at 350.
- Quickly combine egg and water (start with a smaller amount of club soda).
- Add vegies, shrimp, flour, corn starch, salt and pepper. combine until just barly mixed. Should still be lumpy.
- Add more club soda if very dry, should almost pour, but still hold together in the hot oil.
- Deep fry until golden and cooked through.
