Turkey Mole(Mole De Guajolote)
- 1 turkey drumstick and thigh
- 1 large onion
- 1 tsp. coriander seed
- 2 bay leaves
- water
- flour and butter roux (2 Tbsp. of each)
- 2 oz. unsweetened chocolate
- 1 chipotle or 1/2 chile jalapeno
- 1 1/2 oz. raisins
- 1 tsp. sesame, caraway and/or cumin seed
- 1/4 c. sherry or Madeira
- 2 cloves garlic
- Skin the turkey leg; cover it with water; add onion (peeled and quartered), coriander and bay leaves.
- Simmer for at least an hour, until meat comes easily off the bone.
- Drain the turkey and reserve the broth.
- Rub the onions, bay leaves and coriander through a sieve and add the juices to the broth.
- Brown the roux a bit and add the warm broth.
- Heat and stir until mixture thickens.
- Add the chocolate and allow it to melt completely in sauce, stirring constantly.
- Remove from heat.
- Stir in raisins.
- Chop the chipotle or jalapeno and stir into sauce.
- Now add the turkey in pieces not more than 1 inch square.
- Sprinkle seed on top, stir in wine and garlic put through garlic press.
- Return to heat and simmer for about 15 minutes.
- Serve with brown rice, yellow squash and tortilla.
- Serves 4 to 6.
