Jiffy Orange Nut Bread
- 2 c. sifted flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 Tbsp. butter or margarine
- 1/2 c. boiling water
- 2 Tbsp. grated orange rind
- 1/3 c. orange juice
- 1 c. sugar
- 2 tsp. vanilla
- 1 egg, slightly beaten
- 1/2 c. coarsely chopped nuts
- 6 walnut halves
- Grease a large loaf pan.
- Preheat oven to 350u0b0.
- Measure flour, soda, baking powder and salt into sifter.
- Set aside.
- Melt butter in boiling water in medium-size bowl.
- Blend in orange rind and juice, sugar, vanilla and egg.
- Sift in dry ingredients.
- Add nuts.
- Stir until flour is damp.
- Will be lumpy.
- Pour batter into greased pan.
- Place walnut halves on top.
- Bake 30 minutes or until wooden toothpick in center comes out clean.
- Remove from pan; cool on wire rack.
