Cajun Gumbo
- boneless chicken tenders
- 1 1/2 lb. sausage
- 1 lb. shrimp
- 2 large onions, chopped
- 2 c. celery, chopped
- 2 large green peppers, chopped
- 1 c. green onions, chopped
- 1/4 c. flour
- 1 stick butter
- 2 Tbsp. oil
- 1 1/2 qt. water
- 1 large can tomato paste
- 1 large can tomatoes
- 2 pkg. frozen okra, cooked according to box directions
- garlic salt to taste
- 1/2 tsp. crushed red pepper
- 1/2 tsp. thyme
- 1/4 tsp. pepper
- Creole seasoning to taste
- Brown chicken and sausage in oil.
- Drain and set aside.
- Over medium heat, stir flour and butter until well mixed.
- Add all vegetables except okra and cook until tender.
- Add water, tomatoes, tomato paste, spices, chicken and sausage.
- Simmer over low heat for approximately 2 hours, adding more water, if necessary.
- Add shrimp and okra and cook through.
- Serve over rice.
