Protein Fiberlicious Pasta With Meatballs
- 8 oz ground turkey breast
- 2-4 Tbsp. ground flax seed
- 1-2 slices of high fiber whole grain bread
- 2 Tbsp. milk
- 1 egg white with a quarter of the yolk
- pinch of salt, pepper, tsp. garlic powder, tsp. thai hot sauce, dried oregano to taste
- 2 cups fresh raw spinach (chopped)
- 2 cups whole wheat pasta of your choice (prepared)
- 2 cups arrabiata sauce
- For the meatballs:
- Put the ground turkey breast into a mixing bowl with the first 9 ingredients and mix with your hands
- Roll the meat into 1.5 inch balls between your palms and place them in the mixing bowl ready to cook (should yield about 16 balls)
- For the meal:
- Cook the pasta, drain and put it back in the pot, set aside
- Heat a frying pan on medium high heat with a Tbsp. of canola oil
- Once the pan is hot, add the meat balls and brown on all sides.
- Turn the heat down to medium low and let the meatballs cook through about 5 minutes
- Put the pot with the pasta on a burner on low heat
- add the arrabiata sauce and spinach and toss until the spinach wilts, add the meat balls and toss
- Distribute the mixture in two large bowls
