Mardi Gras Spice Cake
- Sift Together;
- 2 1/2 cups sifted enriched flour
- 2 Tsp. Baking powder
- 1 cup sugar
- 1 Tsp. salt
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. allspice
- 1/2 tsp. nutmeg
- ADD;
- 1/2 cup shortening ( half butter may be used )
- 1 cup milk
- 1/2 cup dark molasses
- 1 tsp. vanilla
- Beat for 2 minutes,300 strokes,until batter is well blended. With electric mixer, blend at low speed. Then beat at medium spped for 2 minutes.
- Add 2 eggs; blend, then beat for 1 minute.
- Pour into 2 well greased and floured 9" round layer pans or a 12 x 8 x 2 rectangular pan.
- Bake in a moderate oven (350) for 30-35 minutes. When layers cool, cut crosswise to make four layers.
- Spread cool whip between layers and cover top and sides. Sprinkle chopped pecans over the top.
- CHILL CAKE IN REFRIGERATOR UNTIL SERVING TIME.
