Mardi Gras Spice Cake

  1. Beat for 2 minutes,300 strokes,until batter is well blended. With electric mixer, blend at low speed. Then beat at medium spped for 2 minutes.
  2. Add 2 eggs; blend, then beat for 1 minute.
  3. Pour into 2 well greased and floured 9" round layer pans or a 12 x 8 x 2 rectangular pan.
  4. Bake in a moderate oven (350) for 30-35 minutes. When layers cool, cut crosswise to make four layers.
  5. Spread cool whip between layers and cover top and sides. Sprinkle chopped pecans over the top.
  6. CHILL CAKE IN REFRIGERATOR UNTIL SERVING TIME.
