Sweet And Sour Tofu
- 1/4 tsp. garlic powder
- 3 Tbsp. cornstarch
- 1/4 c. tamari
- 1 c. carrot slices
- 1/2 c. green pepper slices
- 1/4 c. pineapple chunks
- 1 lb. firm tofu
- 1 Tbsp. oil
- 1 1/2 c. unsweetened pineapple juice
- 1/2 c. brown sugar
- 1/2 c. apple cider vinegar
- Slice tofu into 1-inch squares that are about 1/4-inch thick. Lightly brush a cookie sheet with oil.
- Place the tofu squares on the sheet and brush the tops with remaining oil.
- Broil for 5 minutes on each side.
- Steam the carrots and green pepper slices until tender.
- Combine the cornstarch with 3 tablespoons of the tamari.
- Mix thoroughly to remove all lumps.
- In a large saucepan, combine the pineapple juice, brown sugar, vinegar, garlic powder, cornstarch mixture and the remaining tamari.
- Bring to a boil. Lower heat and simmer until thickened.
- Add the steamed vegetables, pineapple and tofu.
- Serve on rice.
