Pecan Breaded Chicken
- 4 whole skinless and boneless chicken breasts, halved
- 6 Tbsp. margarine or butter
- 1/4 c. plus 2 Tbsp. Dijon mustard
- 2 c. finely ground pecans
- 2 c. sour cream
- ground black pepper
- Preheat oven to 400u0b0 and lightly grease a baking pan.
- Flatten chicken breasts with a meat pounder and lightly pepper them.
- Melt butter in a saucepan and then remove from heat.
- Whisk in 1/4 cup mustard.
- Dip chicken into butter and mustard mixture and then into ground pecans.
- Arrange chicken breasts in the baking pan.
- Place chicken in the oven and bake for 20 minutes until golden brown. Remove chicken from pan.
- Pour pan drippings into a bowl; add sour cream and mustard mixture on each dinner plate and cover with a chicken breast.
- Serves 6 to 8 people.
