Grilled Vegetable Fattoush

  1. Brush pita, red and green peppers, and scallions with olive oil. Grill over medium heat until pita are crisp, and vegetables are lightly grilled but still crisp.
  2. Large dice grilled peppers and scallion. Break pita into bite sized pieces.
  3. Whisk together 1/3c. olive oil - tahini.
  4. In a large bowl, toss all vegetables and pita pieces with dressing. Season to taste with salt and pepper.
