Beef Stroganoff(Serves 4 To 6)
- 3 Tbsp. flour
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 lb. beef tenderloin
- 1 cut clove garlic
- 1/4 c. butter or margarine
- 1/2 c. minced onion
- 1/4 c. water
- 1 can condensed chicken soup
- 1 lb. sliced mushrooms
- 1 c. sour cream
- Combine flour, salt and pepper; trim fat from meat.
- Rub both sides with garlic.
- Pound flour into meat.
- Cut meat in 1 1/2 x 1-inch strips.
- In hot butter, in Dutch oven, brown meat, turning often.
- Add onion, saute until golden brown.
- Add water, stir to dissolve brown bits in bottom of pan.
- Add soup, mushrooms.
- Cook uncovered over low heat, stirring occasionally until mixture is thick and meat is tender.
- Just before serving, stir in sour cream. Heat but do not boil.
- Serve over rice or noodles.
