Bill'S Greek Salad
- Salad:
- 2 cucumbers, peeled and diced into approx. 1/2" cubes
- 2 cups grape cherry tomatoes, halved
- 1 cup feta cheese, crumbled
- 2 cans (31 oz.) chickpeas, drained and rinsed
- 1 cup olives (pittled), chopped
- 1 cup Italian parsley leaves, chopped
- 2 hearts of romaine, cut-up
- Dressing:
- 1 small red onion, thinly sliced
- 4 Tbl fresh lemon juice
- 4 Tbl olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- Combine salad dressing items and let sit for at least 5 minutes.
- In a large bowl, combine salad ingredients.
- Just before serving, toss with dressing, to taste. Season with salt and pepper to taste.
