Barbequed Oysters With Black Garlic Bacon

  1. 1. Preheat your grill and add some wood chunks for smoking.
  2. 2. In a saute pan over medium heat render the bacon until crisp.
  3. 3. Add the onions and cook until softened.
  4. 4. Add the leeks and continue to cook until the onions are caramelized.
  5. 5. Add the white wine and scrape any particles that have stuck to the pan.
  6. 6. Roast the oyster whole in the shell on the grill until they pop open on their own.
  7. 7. Once they pop open, pull off the top shell and top the oysters with the onion and pancetta mixture and then with a healthy amount of Parmigiano Reggiano.
  8. 8. Continue to grill until the cheese just starts to melt.
  9. 9. Remove from grill and finish with parsley and chives.
  10. 10. Serve with lemon wedges.
