Chicken And Tortellini Soup
- 2 Med onions
- 2 stalks celery
- 2 lg carrots
- 3 cloves garlic
- 2 Tbs olive oil
- 28 oz can dices tomatoes
- 32 oz chicken broth
- 1.5 C red cooking wine
- 8 oz tomato sauce
- 1/2 tsp oregano
- 1 tsp basil
- 1/4 tsp thyme
- 1/4 tsp sage
- 3 halves chicken breasts (1.5 breasts)
- 12 oz 3-cheese tortellini
- 1/2 pkg frozen chopped spinach
- parmesan cheese
- Sautee first 4 ingredients in olive oil, then add next 8 ingredients and simmer for about 1 hour. Add chicken, cut into medium chunks, tortellini, and spinach (thawed). Simmer 15 minutes. Serve with grated parmesan.
