Jelly Sponge Pudding
- 2 oz (55g) butter
- 2 oz (55g) sugar
- 2 oz (55g) self-raising flour
- 1/2 teaspoon vanilla essence
- 1 egg
- 2 tablespoons milk
- 2 tablespoons apple jelly (or your favorite flavor)
- Butter a microwave safe bowl with a capacity of about 3 cups (600ml). Cream the butter and sugar. Mix in the flour, vanilla, egg and milk. Both creaming and mixing can be done in a food processer (just pulse for the second step).
- Put the jelly in the bottom of the buttered bowl. Top with the batter and smooth the top.
- Cover the bowl with plastic film, pleated in the middle - you want to keep the steam in, and the pudding will rise during cooking.
- Microwave on HIGH for 4 minutes.
- Remove, invert on a plate, and serve immediately - it does not keep well.
