Jelly Sponge Pudding

  1. Butter a microwave safe bowl with a capacity of about 3 cups (600ml). Cream the butter and sugar. Mix in the flour, vanilla, egg and milk. Both creaming and mixing can be done in a food processer (just pulse for the second step).
  2. Put the jelly in the bottom of the buttered bowl. Top with the batter and smooth the top.
  3. Cover the bowl with plastic film, pleated in the middle - you want to keep the steam in, and the pudding will rise during cooking.
  4. Microwave on HIGH for 4 minutes.
  5. Remove, invert on a plate, and serve immediately - it does not keep well.
