Expeditious Enchiladas
- 1 can Campbell's Cream of Mushroom soup
- 1 C sour cream
- 1/2 to 1 C Jack's Special Salsa, Medium heat; from Costco
- 1 C Morning Star Farms "Meal Starters" Grillers Recipe Crumbles
- 1 C shredded sharp cheddar or monterey jack cheese
- 8 "Truly Handmade" small flour tortillas from Trader Joe's
- 1-15 oz can tomato sauce
- Optional toppings: shredded cheese, 1 diced tomato, chopped green onion
- Mix soup, sour cream, salsa to taste, Crumbles, and cheese.
- Place evenly divided mixture on tortillas and roll up.
- Arrange rolls in an 11 x 8 baking dish and top with tomato sauce. Sprinkle toppings if desired.
- Cook on high in microwave until cheese melts - filling will ooze from ends - about 5 to 6 minutes.
