Sweetest Potato Pie
- 1 1/4 lbs sweet potatoes
- 3 eggs
- 1 cup packed light brown sugar
- 1/2 tsp ground cinnamon
- 1/2 tsp grated nutmeg
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 1/4 tsp ground cloves
- 1/4 tsp ground allspice
- 1/4 tsp ground cardamom
- 1/4 tsp ground coriander
- 3/4 cup whipping cream
- 1/2 cup half and half
- 3 tbsp bourbon
- 1 tbsp vanilla extract
- 1 unbaked 9 inch pie shell
- Preheat oven to 400 degrees F. pierce aweet potatoes with a fork and back until tender, about one hour. Cool to room temp, peel them, and mash enough to equal 1 3/4 cups.
- Reset oven to 350 degrees F and place baking sheet on middle rack.
- In a food processor, combine sweet potatoes, eggs, light brown sugar, cinnamon, nutmeg, ginger, salt, cloves, allspice, coardamom, and coriander. Process briefly. Add whipping cream, half and half, bourbon, and vanilla extract and process again until smooth. Pour the filling into the pie shell, set it on the heated baking sheet, and bake 45 to 50 minutes or until a toothpick inserted into the center comes out clean. Cool on rack before cutting.
