Layered Veggie Black Bean Casserole
- *1TBS. walnut or flax oil
- *1 med. onion, chopped
- *1/2 bell pepper, seeded and chopped
- *1 1/2 c. your favorite mild salsa
- *tsp. oregano
- *32 oz. black beans (drained)
- *salt and pepper to taste
- *whole wheat burrito shells
- *10 oz. frozen corn
- *4 c. shredded cheeses (mozzarella,monteray jack)
- Heat oil then sautee onion, garlic and bell pepper until soft. Add salsa, oregano, beans, salt and pepper.Mash some of the black beans. Heat oven to 375 degrees. Grease 9x13 glass dish and spread 1/3 of bean mixture in bottom of pan and top with an even layer of burrito shells. (you can tear them to fit to size) Top with another 1/3 of bean mixture, followed by 1/2 of the corn, then 1/2 of the cheese. Top with another layer of shells, rest of the bean mix, then the corn and cheese. Cover with foil and cook about 20 minutes. Remove foil and cook additional 10 minutes, or until bubbly. Enjoy!
