Wheat Bread

  1. Soften yeast in warm water.
  2. Put milk, sugars, salt in a sauce pan and scald milk.
  3. Cool to lukewarm and transfer to a big mixing bowl.
  4. Add yeast & water then add whole wheat flour. The dough will be sticky.
  5. Add white flour a little at a time until dough is springy and not sticky.
  6. Knead.
  7. Let rest 15 minutes.
  8. Divide into 3 loaves.
  9. Bake at 350-375 for 30-35 minutes.
  10. Tips: Milk is scalded when it starts to get a skin on top.
  11. Always knead dough on floured board or counter.
  12. Flour *always* gets on clothes and on the floor!
  13. Bread loaves are done if it is turned out of pan and it sounds hollow if tapped on the bottom with finger nails. If not done - flip back into pan & bake some more.
  14. Melted butter brushed on top of just baked bread keeps the crust soft, otherwise it gets hard & crunchy.
