Chinese Pepper Steak

  1. Cut meat diagonally against grain in thin slivers or strips. Cut green peppers into thin strips.
  2. Sear meat over high heat in hot salad oil, stirring quickly.
  3. Add onion, garlic, green peppers and celery.
  4. Add consomme.
  5. Season with salt and pepper to taste. Cover and turn heat to moderate and cook 5 minutes.
  6. Thicken with cornstarch blended with water and soy sauce.
  7. Simmer 5 minutes more.
  8. Serve immediately with freshly boiled rice or brown rice.
