Granola Bars
- 340 grams diced dates
- 2 tablespoons rum
- 160 grams flour
- 50 grams rolled oats
- 2.5 teaspoons baking powder
- 250 grams sugar
- 3/4 teaspoon salt
- 3 pieces eggs
- 2 tablespoons butter, melted
- 2 teaspoons vanilla
- 2 tablespoons hot water
- 1.5 cups toasted pecans
- 1/2 cup coconut
- 1/2 cup cacao nibs
- dice dates and soak in rum for at least 30 minutes
- combine flour, oats, baking powder, sugar and salt.
- combine butter, vanilla and hot water.
- add eggs and combined liquids to flour mixture.
- stir in pecans, cacao nibs, coconut and dates.
- spread in greased 9 x 13 pan.
- Bake for 35-45 minutes at 350 degrees.
- cool and cut into 16 rectangles.
