Indian-Grilled Shrimp
- For Garam Masala
- 1 1/2 teaspoons cardamom seeds
- 5 teaspoons coriander seeds
- 1 teaspoon cumin seeds
- 1 1/2 teaspoons whole cloves
- 6 teaspoons whole black peppercorns
- For marinade:
- 2 tablespoons rice wine vinegar
- 1 tablespoon peanut oil
- 2 cloves minced garlic
- 1/2 teaspoon salt
- 1 pound jumbo shrimp, shelled
- For garnish:
- 2 tablespoons chopped cilantro
- Make Garam Masala:
- Toast seeds, cloves, and peppercorns in an ungreased frying pan over madium heat for 3-4 minutes, or until they are fragrant. Grind them in a pepper mill.
- Marinate shrimp:
- Mix 2 teaspoons of the Garam Masala with the vinegar, oil, salt and garlic. Combine with shrimp and marinate at room temperature 15 minutes. Turn over once.
- Put shrimp on four skewers and grill them over moderately high heat 2 minutes on a side.
- Serve with cilantro sprinkled over the shrimp.
