Hot Turkey Salad
- 2 c. cubed turkey
- 1 c. chopped celery
- 1 c. chopped green pepper
- 2/3 c. sliced green onions
- 1/3 c. shredded sharp Cheddar cheese
- 1 (4 oz.) jar pimento, drained
- 1/3 c. reduced calorie mayo
- 1 Tbsp. lemon juice
- 1 tsp. Worcestershire sauce
- 1/2 tsp. hot sauce
- vegetable cooking spray
- 3 Tbsp. fine, dry bread crumbs
- 1 Tbsp. margarine, melted
- Combine the first 6 ingredients in a large bowl; toss. Combine mayo, lemon juice, Worcestershire sauce and hot sauce. Add to turkey mixture.
- Mix well.
- Spoon mixture into a 1 1/2-quart casserole coated with cooking spray.
- Combine bread crumbs and margarine.
- Sprinkle evenly over turkey mixture. Bake at 350u0b0 for 20 to 25 minutes or until thoroughly heated.
- Yields 4 servings (about 261 calories per serving).
